12 Minute Carrot Cake
You need only 5 ingredients for this great cake. It's easy enough
for even small cooks with some supervision. Don't be surprised if Mom
borrows the recipe -- she's going to like how easy it is to make,
and how great it tastes!
- 1 package (14 oz.) gingerbread mix
- 1 medium carrot, peeled and shredded
- 1 cup Tree Top Unsweetened Apple Sauce
- 1/2 cup raisins
- 1/2 cup chopped or broken nuts
Open gingerbread mix and pour into large mixing bowl. Add all remaining
ingredients and stir with a spoon until completely moistened. Turn batter
into 9 inch glass baking dish or microwaveable 9 inch round cake pan.
Place dish or pan on microwaveable rack or overturned saucer in microwave oven.
Cook in microwave on HIGH for 8-10 minutes, turning dish 1/4 turn every two
minutes. Test for doneness after 8 minutes. Cake is done when it begins to pull
away from the sides of the dish and is almost dry on the top in the center.
Cook another 1 to 2 minutes, if necessary, until done.
Using hot pads, remove cake from microwave to wire rack. Cover top loosely
with plastic wrap or waxed paper and let stand 10 to 15 minutes. Serve warm
or cold, topped with additional apple sauce, whipped cream cheese or whipped
cream or topping. Makes 8 servings
