Cherries Jubilee
- 1 1/2 cups water
- 1 1/2 cups (12 oz.) Tree Top Frozen Apple Juice, thawed
- 2 cups cherries, pitted
- 3 tbsp. cornstarch
- 4 tbsp. water
- 1/4 cup brandy, heated
- 1 qt. vanilla ice cream, cut into 8 slices
Combine apple juice concentrate and water in a medium saucepan
and bring to a boil. Boil 5 minutes, then remove from heat and
add cherries. Combine cornstarch and 3 tbsp. water; add to cherry
mixture, cook over medium heat until thick and bubbly, stirring
constantly. Pour into a chafing dish or deep 12 inch frying pan,
add brandy and ignite. Serve immediately over ice cream. Serves 8.
