Chicken Curry
Made just for the microwave, this entree gets
a savory base from apple sauce.
- 4 boneless, skinless chicken breast halves (4-6 oz. each)
- Seasoned Flour
- 1 tbsp. vegetable oil
- 1/2 cup each chopped onion, diced green pepper and sliced carrot
- 1 1/2 cups Tree Top Apple Sauce
- 1 tbsp. curry powder
- 3/4 teaspoon salt
Dredge chicken in seasoned flour; brown in large nonstick skillet
in oil. Remove chicken to baking dish with thickest portions toward
outside edge. Sauté onion, green pepper and carrot in drippings;
stir in apple sauce and curry. Pour over chicken and cover with waxed
paper. Microwave at HIGH (100 percent) 7 to 10 minutes or until
chicken is cooked and juices run clear when cut with knife. Makes 4 servings.
Seasoned Flour: Combine 1/4 cup flour, 1/2 tsp. salt and 1/8 tsp.
pepper. Makes 1/4 cup.
