Roast Pork with Apple Honey Mustard Glaze

Roast Pork with Apple Honey Mustard Glaze
- 3 lbs pork loin roast
- 4 tbsp. olive oil
- 1 medium onion, diced
- 2 cloves garlic
- 2 cups Tree Top Apple Juice
- 1/4 cup honey
- 1 tbsp. dry oregano
- 1 tsp. dry rubbed sage
- 2 tbsp. Dijon mustard
- 1 tsp. lemon juice
- 1 tbsp. Worcestershire sauce
- Salt and pepper to taste
Preheat oven to 350 degrees. Begin making the
glaze by adding olive oil, onions and garlic to a
medium-size saucepan and cooking on high heat
for 3 minutes. Add apple juice and cook until 1
cup of liquid remains, about 15 minutes.
While the glaze is cooking, place a large saute'
pan on stove top. On high heat, add 1 tablespoon
of olive oil and sear pork on all sides for
about 5 minutes. Place in oven and roast
approximately 30-45 minutes or until internal
temperature shows approximately 135 degrees
on an instant-read thermometer.
While the roast is cooking, finish making glaze.
Add honey, dry oregano and dry rubbed sage.
Cook until glaze becomes thick like syrup. Add
the Dijon mustard, lemon juice,Worcestershire
sauce, salt and black pepper. Remove from heat
and glaze pork 3-4 times during roasting process.
Slice roast and serve. Serves 6
