German Potato Salad

Ready in 15 minutes or less, this traditional favorite gets just the right touch of sweetness from apple sauce.

  • 6 Medium red potatoes (about 1 1/2 lbs.), sliced
  • 1/4 cup water
  • 4 slices bacon
  • 1/2 cup each chopped onion and celery
  • 2 cups Tree Top Apple Sauce
  • 1/4 cup cider vinegar
  • 1 tsp. dry mustard
  • 1/2 tsp dried oregano, crushed
  • Salt and pepper

Combine potatoes and water in 1qt microwave-safe bowl; cover with plastic wrap and microwave at HIGH (100 percent) 7 to 10 minutes or until potatoes are tender; drain and set aside. Combine bacon, onion and celery in microwave-safe bowl baking dish; cover with waxed paper. Microwave at HIGH 3 to 4 minutes or until bacon is crisp; drain all but 2 tbsp. bacon grease. Stir in apple sauce, vinegar, mustard and oregano. Microwave on HIGH 1 minute. Stir in potatoes and toss well. Salt and pepper to taste. Makes 4 servings.
