Wilted Spinach Salad

  • 1 bunch spinach, washed and trimmed
  • 1 cup mushrooms, sliced
  • 1/4 cup red onions, chopped
  • 4 slices bacon, cut into 1/2 inch pieces
  • 2 tbsp. Tree Top Frozen Apple Juice, thawed
  • 1/4 cup red wine vinegar

Place spinach, sliced mushrooms and red onions in large salad bowl, set aside.

Place bacon in a small skillet and cook over medium heat until just starting to brown. Remove from heat and pour off one-half of the grease. Return to heat, add apple juice concentrate and vinegar and bring to a boil.

Pour over spinach mixture and toss until well mixed. Serves 4 to 6.
