Apple Stuffed Pork Chops

  • 4 large pork chops, 1 1/2 in. thick
  • 1 C crouton type prepared stuffing
  • 3/4 C low moisture or evaporated apple grind
  • 1 small onion, peeled and diced
  • 2 tbsp melted margarine
  • 1/2 C canned Tree Top apple juice
  • flour, salt, and pepper
  • 2 tsp melted margarine

Slit chops to make pocket for stuffing. Combine croutons, apple, and onion. Add melted margarine and apple juice and toss lightly to mix. Fill pockets with the mixture and fasten with toothpicks. Dust chops lightly with flour and season with salt and pepper. Brown in melted margarine and arrange in baking pan. Cover pan with foil and bake in 350 oven for about 1 hour. (Serves 4)
