Banana-Nut Muffins
- 1/2 C banana flakes powder =46 g
- 1 C water = 8 oz
- 3/4 C sugar = 130 g
- 1 egg = 50 g
- 1/2 C vegetable oil = 75 g
- 1 tbsp vanilla = 2 g
- 2 C flour = 271 g
- 3/4 C walnuts = 90 g
- 1/2 tsp nutmeg = 1.5 g
- 1/4 tsp salt = 1.3 g
- 2 tsp baking soda = 9 g
- 1/3 C plain nonfat yogurt = 78g
In small bowl, combine banana flake powder and water until smooth.
In large mixing bowl, blend sugar, egg, oil, vanilla. Add the banana
puree'. In separate bowl, blend the flour, baking soda, nutmeg, and salt.
Blend into banana mixture just until combined. Blend in yogurt and walnuts;
do not overmix. Pour 1/3 cup batter into greased muffin tins. Bake for 18-22
minutes at 350, until golden brown (Makes 12 muffins)
