Apple Potato Salad
- 5 C cooked potato, cubed
- 1 1/2 C LM, evaporated, or frozen apple dices = 187 g
- 1/2 C green pepper,
- chopped = 60 g
- 1/4 C onion, chopped = 27 g
- 1 C plain, nonfat yogurt = 257 g
- 1/2 C mayonnaise
In large bowl, combine potatoes, apple dices, green pepper and onion.
Toss lightly with a mixture of yogurt and mayonnaise. Serve on lettuce
if desired. (Makes 6 servings)
