Apple Potato Salad

  • 5 C cooked potato, cubed
  • 1 1/2 C LM, evaporated, or frozen apple dices = 187 g
  • 1/2 C green pepper,
  • chopped = 60 g
  • 1/4 C onion, chopped = 27 g
  • 1 C plain, nonfat yogurt = 257 g
  • 1/2 C mayonnaise

In large bowl, combine potatoes, apple dices, green pepper and onion. Toss lightly with a mixture of yogurt and mayonnaise. Serve on lettuce if desired. (Makes 6 servings)
