
Low Fat Blueberry Pancakes
Blueberries make these pancakes a special item for your weekend brunch.
Ingredients
- 1 egg separated
- 2 cups plain low-fat yogurt
- ½ cup Tree Top Apple Sauce
- ¼ cup sugar
- 1 teaspoon vanilla extract
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 ¾ cups flour
- 3 egg whites
- 1 pint (2 cups) blueberries rinsed & patted dry
Instructions
- Add yogurt, apple sauce, sugar & vanilla to egg yolk. Stir with rubber spatula to mix, then stir in baking soda, salt & flour until blended. Beat egg whites with an electric mixer until stiff peaks form. Stir ½ egg whites into the batter until blended. Gently fold in remaining until there are no white streaks. Cook on griddle to desired brown-ness on both sides.
