Apple Chutney Chicken Cantina Quesadillas

The apples, cheese & chicken go well together for a quick lunch that is kid friendly.

Ingredients

• Apple Chutney:
• 2 teaspoons mild olive oil
• 1 ⅓ cup chopped peeled core Granny Smith or other cooking apples
• 1 cup chopped onion
• ¼ cup seeded jalapeno
• ⅓ cup dried currants
• 1 tablespoons packed brown sugar
• ½ teaspoon all spice
• ¼ cup Tree Top Frozen Concentrate Apple Juice thawed
• 2 tablespoons apple cider vinegar
• Chicken Quesadillas:
• 8 flour tortillas 6inch
• 1 cup shredded rotisserie or fully cooked chicken
• 1 cup shredded sharp cheddar cheese
• ⅓ cup crumbled blue cheese
• 2 tablespoons mild olive oil

Directions

1. Heat oil over medium heat in a large non-stick skillet. Add apples, onion, and jalapeno, saute until golden and tender about 15 minutes. Stir in currants, brown sugar and all spice. Pour in Tree Top juice and vinegar; continue cooking until all liquid is absorbed. Set aside to cool.

1. Place 4 tortillas onto work surface, divide each with chicken, cheddar cheese and blue cheese. Top with remaining tortillas.
2. In a large non-stick skillet heat 1 teaspoon oil over medium-high heat. Working in batches cook quesadillas one at a time until golden on both sides adding more oil if needed. Keep cooked quesadillas warm in 250F. oven on large baking sheet until finished.
