In a medium saucepan, combine apple juice, honey, and the cinnamon stick. Bring to a boil and cook until thickened, about 15-20 minutes. Set aside.
In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In another bowl, whisk together apple sauce, eggs, and milk. Add wet ingredients to flour and stir until combined.
Heat a nonstick pan or griddle over medium heat. Dip a paper towel in a little oil and lightly grease the pan. Using a tablespoon, drop batter onto hot pan and cook until browned on one side, 2 minutes. Flip and brown second side, 2 minutes more. Remove to a platter and keep warm in oven while you cook remaining pancakes.
