Cake with Fluffy Orange Icing

Super moist cake with an orange kick.

Ingredients

  • Apple Sauce Cake:
  • 1 ⅔ cups sifted flour
  • 1 ⅓ cups sugar
  • ¼ teaspoon double-action baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon cloves
  • ¼ teaspoon allspice
  • ⅓ cup shortening
  • ⅓ cup water
  • ⅓ cup chopped nuts
  • ⅔ cup raisins
  • 1 cup Tree Top Apple Sauce
  • 1 egg
  • Fluffy Orange Icing:
  • 1 - 3 oz package cream cheese
  • 1 ½ cups sifted confectioners sugar
  • 1 Orange

Directions

  1. Preheat oven to 350° F. Sift into bowl: flour, sugar, baking powder, baking soda, salt, cinnamon, cloves and allspice. Set aside dry. Combine shortening, water and apple sauce into bowl. Beat ingredients vigorously with spoon for 2 minutes, or mix with electric mixer on slow to medium speed for 2 minutes. Scrape sides and bottom of bowl frequently. Add egg and continue beating 2 more minutes, scraping bowl frequently. Combine in dry ingredients, fold in nuts and raisins. Grease generously and dust with flour 1 square pan (9"x9"x2"). Bake 50 to 55 minutes. Cool in pan and frost with Fluffy Orange Icing. Fluffy Orange Icing: Cream one 3 oz package cream cheese until light and fluffy. Gradually add 1 ½ cups sifted confectioners sugar. Beat well. Stir in grated rind of 1 orange (1 tbsp). If too thick to spread, add a few drops of orange juice.

Serve warm.
