Low Fat Blueberry Pancakes
Blueberries make these pancakes a special item for your weekend brunch.
    Ingredients
    • 1 egg separated
    • 2cups plain low-fat yogurt
    • ½cup Tree Top Apple Sauce
    • ¼cup sugar
    • 1teaspoon vanilla extract
    • 2teaspoons baking soda
    • ½teaspoon salt
    • 1 ¾cups flour
    • 3 egg whites
    • 1pint (2 cups) blueberriesrinsed & patted dry
    Instructions
    1. Add yogurt, apple sauce, sugar & vanilla to egg yolk. Stir with rubber spatula to mix, then stir in baking soda, salt & flour until blended. Beat egg whites with an electric mixer until stiff peaks form. Stir ½ egg whites into the batter until blended. Gently fold in remaining until there are no white streaks. Cook on griddle to desired brown-ness on both sides.
