Oatmeal Apple Cake with Cream Cheese Frosting

An absolutely delicious, dense cake with cinnamon cream cheese frosting.

Ingredients

  • Cake:
  • ¾ cup butter softened
  • 1 ½ cups sugar
  • 4 eggs
  • ¾ cups milk
  • 1 ½ cups all-purpose flour
  • 1 cup Tree Top Apple Sauce
  • 1 tablespoon baking powder
  • 1 ½ teaspoon ground cinnamon
  • ¾ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 ½ cups raisins
  • 1 ½ cups oatmeal; uncooked
  • Icing:
  • 2 lbs. powered sugar
  • ½ cup butter; softened
  • 8 oz. cream cheese; softened
  • 1 teaspoon vanilla
  • 2 lbs. powered sugar
  • ½ cup butter; softened
  • 8 oz. cream cheese; softened
  • 1 teaspoon vanilla

Directions

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans. Mix together flour, oats, salt, ground cinnamon, ground cloves and baking powder. In a larger bowl cream the butter with the sugar and then add the eggs, apple sauce and milk. Add the dry ingredients and mix well. Add raisins and pour into prepared round cake pans. Bake in preheated oven for 30-35 minutes or until cake tester inserted in center comes out clean. Cool on wire racks. When completely cooled, ice with cream cheese frosting. For frosting: mix cream cheese, butter and powdered sugar in a mixing bowl until smooth. Add vanilla and blend well. Frost cake and store in refrigerator.

Serve cold.
