    1. Beat together egg, sour cream and apple juice concentrate in a large bowl until smooth. Sift remaining ingredients together and add to egg mixture. Stir until just mixed. Line a 12 muffin pan with paper liners and fill each liner ⅔ full with muffin mixture. Bake at 400° F for 20 minutes.
